It’s the most wonderful—and scrumptious!—time of the year. And we’re making it even sweeter with the help of JUSTICE OF THE PIES‘ Maya-Camille Broussard, a woman who fulfills over 200 pie orders per holiday. That’s a lot of pie. We couldn’t help but share Maya’s love of pies with all of you to help make the holidays a little more merry and bright. Follow along with this holiday pie special for a mistletoe-filled baking tutorial, along with a basic pie crust recipe and expert tips for any pie enthusiast.

Justice of the Pies specializes in sweet and savory pies, quiches and tarts. Maya established her niche bakery in honor of her late father, Stephen—who dubbed himself the Pie Master and was a criminal defense attorney with a passion for baking anything made with a crust. Justice of the Pies was created to celebrate his love for pies and to honor his belief that everyone deserves an opportunity to reform their lives. Not only is Maya whipping up amazing pies, but she’s positively impacting the lives of those who work for Justice of the Pies.

Watch below as Maya walks us through a customer favorite, her Bleu Cheese Praline Pear Pie. This fruit-filled pie is topped with an oatmeal crumb, homemade praline sauce and bleu cheese crumbles in a savory crust. And to amp up the festive cheer, throw on Maya’s favorite This Christmas by Donny Hathaway for optimal baking results.


“If you want flaky, buttery crust, you don’t always have to use shortening or even a shot a vodka,” explains Maya. “What you really need is extremely cold butter. Cube the butter for more even distribution as you are cutting the butter into the flour. You want to be able to see streaks of butter in your crust disk.” Maya graciously dishes a simple pie crust recipe for us: 


2 sticks of butter
3 cups all purpose flour
1 tsp salt
1 tbsp sugar
1 cup cold water

Cut butter into flour. Also salt and sugar.
Once the mixture looks like wet sand with lumps of butter, add water.

Maya also reveals that an egg wash is the key to a beautifully shiny crust, and fancy ceramic pie weights can easily be replaced with dry beans to get the job done. And the most overrated baking tool? The pie shield. Her wealth of knowledge with the classic holiday dessert is never ending—just like our love for her.
