For superstar chef Johanna M. Cook, who lovingly goes by stage name Momma Cuisine, prepping delish meals in a jiff is her middle name. And it was born out of necessity. With a growing food empire which includes a popular digital cookbook, numerous national appearances and streaming content on ROKU, Momma can’t afford to be slow in the kitchen. Not to mention she’s got three charming children who are hooked on her high class but low maintenance meals, too! We invited the lovable foodie over—for a second time on G&F!—and put her to the ultimate test: can Momma whip up a simple, delicious and stylish meal in under 15 minutes? (The answer: Yes).
MAKE MOJO TACOS WITH MAMA >>
On the menu? Mojo tacos. While the street name Mojo refers to how sexy your swagger is, the foodie variety comes from Cuban cuisine. For Momma, it’s one in the same. The sassy sauce is a bold mixture of garlic, olive oil and citrus—and we want it on everything! Momma whips up this perfect summer meal in no time flat.
MOMMA CUISINE’S MOJO TACOS
- 6-8 cloves garlic, minced
- 1 jalapeno, de-seeded and finely chopped
- 2 teaspoons kosher salt
- 1.5 teaspoons ground cumen
- 1.5 teaspoons smoked paprika
- Fresh cracked pepper
- 1/4 cup fresh lime juice
- 1/4 cup fresh orange juice
- 4 tablespoons olive oil
- 1 pound medium shrimp, peeled, deveined and thawed
In a mixing bowl, combine the cilantro, jalapeno, garlic, spices, juices and olive oil. Whisk combine all the ingredients. In another mixing bowl, add the shrimp and marinate it with about half of the mojo sauce for about 15-20 minutes. Then, grill the shrimp until both sides turn that beautiful bright pink color. Once the shrimp turn pink, immediately take them off the grill. Serve on a platter with the other half of the mojo sauce for dipping.
